Cook spinach in boiling water for a couple of minutes and cool them down quickly in water and ice (or in very cold water to preserve their original color).
Blend them with 100 gr olive oil, 50 gr water, salt and pepper using a blender.
This will be your base sauce.
In the meantime, chop walnuts coarsely and sauté them in a pan with a knob of butter.
Cook ravioli and sauté them with a little olive oil, a small ladle of water and then add walnuts.
Plate ravioli on top of spinach sauce.
